Almost as good as DeBuyer

I love Cannelle, the perfect cream inside with a crunchy outside so I've strived to make it perfect. In an attempt to limit the amount of cookware in my apartment, I've experimented with different cupcake pans, and the results are eminently edible, but not perfect: scoring is necessary to get the extra surface area of the crust. Copper molds are insanely expensive, so I bought one each from Freshware, World Cuisine (aka Prochef), and a DeBuyer Elastomoule mold to see which ones get the most out of a batch of dough. The DeBuyer shape allows for slightly better channeling due to the more pronounced channeling. World Cuisine and Freshware made the same cannula in the first batch, but I doubt World Cuisine's cannula will hold up over time - the silicone is thinner and after the first use part of the cannula is flattened or otherwise deformed. . So my final rating is 5 stars for DeBuyer, 4 stars for Freshware and 3 stars for World Cuisine. plus a Freshware is the best combination for a batch. And for a recipe that needs to start two days in advance and where the end product freezes well, don't make smaller batches. (2) Brush out the molds. A 50/50 mix of oil and beeswax before filling gives the best crust. Yes, beeswax is frustrating, but it makes a difference. I suspect the difference is greater than using copper instead of silicone.)
