just like the ones i had as a kid

I've been looking all over the states for this item. This soda ash (jian powder) is widely used in China to make dim sum baozi/mantoe (steamed bread/steamed bread) from sourdough. Not only does it neutralize the sour taste of sourdough, but it also makes steamed bread spicier, like I had when I was a kid. Be careful not to add too much.
