I bought one of these and used it for a few days, then bought more as gifts for everyone I know who cooks. Out of the box, the edge was pretty sharp; not what you can get with a good whetstone or professional sharpener, but as good as you'd expect from industrial knife making. The handle is oval shaped, part steel, part ABS and very heavy. This shifts the balance point back past the end of the blade. When using the knife's pinched handle, the balance point is just above your index finger, which is almost perfect. This is one of the most comfortable knives I've ever used. And it's damn beautiful too. Haven't had to test this through my Chef's Choice yet - if I run into any issues I'll update this review. I did NOT receive a discount or free knife for this review. So yeah, I'm a little bitter.
