My wife has been a professional (meat carver/butcher) for over 13 years (yes she is a woman). LOL

I bought these knives for my wife who was a professional (meat cutter/butcher). ) for over 13 years and a chef at home. Here is her review of all of her Dalstrong knives. Hello, I am reviewing all my Dalstrong knives. A NOTICE. I've been a professional (meat cutter/butcher) and home cook (yes, I'm a woman. LOL) for over 13 years. I've been looking for another knife set for a long time. Proper weight, balance (blade-to-handle ratio), steel grade, blade edge (blade angle), grip and blade flex or stiffness depending on the task you are performing. The boning knife (Dalstrong Gladiator Series) is the most important (I don't let anyone use it), and keep it in a case. (This is 3rd from the left in the picture for clarity). The boning knife does its job! It has the right feel and grip. It has a matching lip on the underside of the blade to keep your hand from slipping on the blade. It has enough flexibility at the tip to maneuver in and around bones and joints and enough stiffness to sever joints and membranes. The quality and sharpness of the blade is amazing and the handle design is an absolute masterpiece. I highly recommend this knife. On a side note, I wish they had a 5 inch boning knife but they don't have one. The rest of my Dalstrong set includes 9.5" and 6" chef's knives (Shogun series). The first two are on the left in the picture. Warning: They are sharp, sharp, sharp! The quality and sharpness of the blade is amazing and the handle design is an absolute masterpiece. 3rd from the left in the picture is my boning knife and 4th-10th is for cooking, everyone (gladiator series). All knives are supplied and boxed in protective cases and tip covers. (The only thing I don't have is a fish fillet knife) These knives are NOT dishwasher safe or safe for children. The blades are very sharp! (I just smudged the edge with my finger and cut the crap out of me!). This is a professional set. They must be hand washed. If you want knives you put in the dishwasher, buy something else! This is a professional kit and should be handled accordingly!
