We had a plastic separator with a hole in the middle and slightly higher slots, but the yolk was often torn and it was painful to separate. This keeps the entire egg secure and separates easily. We love it.

I have a flock of chickens and am a qualified restaurateur. Where has it been all my life? You no longer need to use egg shells to separate. White people don't have eggshells anymore. No more broken yokes. That's great.

The separator did an excellent job of separating the yolk from the white without breaking the yolk. Much better than any manual method. I especially like the ridge that keeps it on the bowl when separating the eggs. Offers hands-free operation.

I was watching an unrelated video about the mass production of French pasta in Korea. They lay a dozen whole eggs in their shells in large bowls. Then, to my great surprise and delight, they used this special tool to fish out the yolk and leave the albumen behind. Too risky for my clumsy hands but very impressed with the industrial use of this product.

I was concerned that the spool might be too loose as the inspection said the yolk had gone through. I don't understand how this is possible. Some of my eggs are harder to separate than others. Some proteins just seem to ooze out, and some I have to cut with a sharp paring knife.
