Description of Cangshan S Series 1020410 2.75-Inch German Steel Forged Peeling/Tourne Knife: Durable and Precise Cutting Tool

Hand crafted full tang knives forged from tight grained, X50CrMoV15 German Steel for incredible durability, stain resistance and exceptional edge retention. Each blade goes through an (ultra6) stage heat treatment ensuring every blade maintains it strength and function. Hand sharpened to a 16-degree angle per side. Well balanced 4.75" handle and 2.75" blade with HRC 58 +/- 2 on the Rockwell Hardness Scale. This peeling knife is shaped like a bird's beak making easy work of peeling and trimming small fruits and vegetables with a rounded surface. It's also ideal for turning vegetables and for making decorative garnish cuts, such as rosettes or fluting. NSF International Certified. Lifetime Warranty against manufacturer defects. Wash knives with warm water and a little detergent, rinse carefully and dry with a towel.

Very heavy, good for paring knives

It's very heavy. Good quality but would like to find a lighter weight. If you are in the industry you will understand what I mean.

Nearly perfect. suitable for cutlery and knife accessories

I bought three different beak knives for comparison. I liked this one second best, but my favorite really fit into the required slot in my knife block. I would like the heel/butt rotated in the opposite direction to match my other knives: looks very awkward next to them in the block. However, this beak style paring knife is well balanced and well balanced between the handle and the blade.

Beautiful.: Kitchen and Dining Room

I have a 3.5" paring knife and a 2.75" paring knife. These are knives with a very elegant design. They are beautiful to look at and hold in your hands. There are higher quality steels than the classic German X50CrMoV15 that this knife is made of, such as: B. Swedish and Japanese steels. So if you are looking for a longer bladed knife, check out the more expensive Cangshan knives or knives from Japanese knife makers like Miyabi, Yaxell, etc. But for the money these knives are excellent value as…

Excellent knife, the best among paring knives

I have been buying Kanshan knives for many years and bought this knife to expand my collection of useful things in the kitchen. Out of the box, as expected, it's sharp as hell, but the real value is in the quality of the metal and handle. I see no problem in sharpening this blade in the future and as long as you treat it like any other knife it will retain its sharpness.
