The manufacturing process of Century knives consists of 37 stages, including a unique multi-stage hardening method and die forging of steel in dies: 1.060oC)- Cooling by ventilation system up to +350oC- Freezing (-80oC) for 30 minutes- Heating with gas (+250oC) (hardness 56-58 units on the Rockwell scale obtained) handle, which ensures that there are no gaps between the handle and the blade - Finishing the handle and neck of the knife - Final sharpening of the blade - Laser stamping of the TRAMONTINA trademark The steel acquires special plasticity, corrosion and heat resistance, while maintaining a hardness of about 58 units on the Rockwell scale. As a result, TRAMONTINA knives require less frequent dressing and sharpening, which ensures a longer service life than knives made from similar steels from other manufacturers. Every step of production is meticulously controlled, from the choice of material to the finishing touch, which is why every Century knife from TRAMONTINA is unique. The handles of the Century series are made of polycarbonate, a material that is more durable and reliable than the common Bakelite. Withstand temperatures up to 200oC. I'm impressed! Exactly the product deserves your attention.

An excellent knife, it keeps its sharpening very well (I sharpen it every 2-3 months, and correct it with musat before work). I sharpen 15 degrees per side (full angle 30). I think it's perfect for the kitchen. Great in the hand. I recommend for those who want a good, kitchen knife, without unnecessary show-off with knives for 10+ thousand.
