I bought this solely for Dry Aging Beef and it has worked well so far. The temperature is kept within 34-39 degrees. I use a pot with some water to keep the humidity between 60-80%. The internal fan runs continuously to ensure good airflow. Grids are also a big plus. It's a bit noisy so be careful. So I was able to successfully dry beef in this refrigerator without modification. I don't use it for anything else.
