Oh my god! What a wonderful find! We had a 16 pound rib to be cooked in a Traeger smoker/grill for Christmas. My husband wanted to cook right on the grill and I needed fat. The only pan that would be big enough would be one of the disposable aluminum skillets, but placing the meat directly on the pan will prevent smoke from getting around the meat. We needed a roasting pan large enough for this caveman-sized cut of meat. I didn't want metal racks as they are very difficult to clean and would likely puncture an aluminum pan. Saw these and ordered two to try. REALLY glad we did. Used one on Christmas Eve with a 5lb pork tenderloin just to test - worked really well. Then on Christmas Day we put two of them in a row in an aluminum pan and put the ribs on top. Ideal! They were easy to clean. And while I was preparing breakfast this morning, I found that they make great coasters too. It's probably used for steaming large items and cooking in a slow cooker. An amazingly versatile item.
