Win the Super Bowl! I eliminated aluminum from all of my meals to avoid potential unhealthy effects of leached metals, and after watching Aaron Franklin's PBS show I decided to try butcher paper for my Super Bowl dinner (along with various temperature/ time settings for my smoke). The results were fantastic. I finally made the perfect brisket that I was really proud of and everyone else agreed. The rind was crispy and flavorful, the flesh was tender and very juicy ripped with the hands. This paper is now a staple of my brisket smoking routine. I also like the packaging as it is perfect for storage and keeps the paper clean and undamaged between uses. It worked great on my baby back ribs too!
