I'm a bit of a coffee addict and have experimented with almost every possible way of making coffee at home (bun coffee maker, french press, cold brew, espresso on the stovetop, etc..) . I have to say that Chemex coffee is simply the best. It's more work for a cup, but it's absolutely better. When I have time, I will make my own coffee this way. When I started brewing coffee in my Chemex, I also started drinking it black, it's so smooth. Be sure to buy Chemex brand filters and be sure to watch the instruction video or read the coffee making instructions. When brewing Chemex coffee, you use more coffee than for the same amount of filter coffee. If you just add some coffee and some water it's fine, but not much different than any other filter coffee you might be making. So be sure to follow the instructions. It also benefits greatly from a medium grind. I used to make this from store bought pre-ground coffee with a finer grind, the coffee tends to slow down as it is drained through the filter and will never run out unless you stir it. When I do this with coffee that I grind at home, on a good medium grind, it's perfect. Have fun chemexing!
