I bought this for my friend who loves to cook and prepares some of the best cured meats to cut up leftovers for sandwiches. Also, we buy blocks of cheese from Costco and wanted to try slicing them. I've reviewed most slicers on Revain and other sites. Since it was going to cut smoked meats, I wanted a bigger blade. Chefs Choice had better visibility but had smaller 7 inch blades or the larger ones were expensive. If you've read the Chefs Choice reviews I'm curious as to why they have such a high rating as everyone in their reviews claims they don't have much power and are limited in what you can cut them. I decided to try this one and that's why it was the winner. Before I started I decided to do a few things. I read all the reviews and decided to follow one of the recommendations and make sure the gears are lubricated. When it arrived I took it apart and greased the gears on the motor and also where the blade meets the aluminum spindle rotates understand that on a brand new device it will not do everything. but it was a gift and I wanted to make sure it worked well for her. Daily difference in slicer blade sharpness. We cut prime smoked ribs and it worked like clockwork. Cut nicely and evenly into very thin slices. I was impressed how easy it cuts and even fast. Not like the ones at Deli, but quick enough to get through the meat, which we quickly sliced. I can understand people's opinions about the flexing of the fence and the uneven thickness of the cuts, but we didn't have that problem. He cut very quickly and didn't put any strain on the engine at all. The reviews are correct that cleaning could be easier given the limited disassembly. However, the tray slides back and forth enough that I was able to easily get at the parts to be cleaned with a cloth. The blade detaches in seconds and is quickly cleaned with dishwashing liquid. It's a lot easier to clean than our Breville juicer, so I'd say it's not bad at all. At the moment I give 5+ stars. For that money he does everything we ask him to do with honor.
