This knife is excellent for carving up fish like the Petral flounder

This knife is great for carving up fish like the Petral flounder. However, I have an older model, maybe 20 years old, that I like a bit more. The blade is more flexible and slightly narrower, possibly from repeated sharpening. I also have two vintage Deglon oyster knives which are excellent.
