Instructions say to grease only if recipe calls for it, but also to avoid cooking splatter. I made mini cornbread muffins to be topped with bacon fat; what I did. I used this pan and my old Wilton Dark Mini Muffin Pan. They were perfect in the US pan! Went straight out and the pan was cleaned lightly (by hand as I don't trust my dishwasher with such items). Dark frying pan? nope; Even after greasing, the cupcakes were sticky and difficult to pull out. That pan went into the trash can, and the US skillet now has a precious spot in my office. Everything well baked. I turned my skillet over once, but I think it's my oven and not the skillet. It's worth it! Will keep the US on my list for when I need more bakeware.
