I bought this to try making ghee from butter. Nobody seems to have used it for that purpose anymore, so it was kind of an experiment. I need to get butter whey and milk proteins before eating them as I get a bad reaction from them. When I heated melted butter in a double boiler, this slotted spoon made it easy to skim off the frothy whey that had risen to the top. I was even able to extract many other milk proteins that separated in the process. After this, the ghee had to be sieved four more times through a layer of very thin gauze, but the end product was much cleaner, containing almost pure butterfat. The skimmer worked very well for my purposes. An added bonus was that I also used a slotted spoon when making chicken and beef broth. It was a lot easier than doing it with a big spoon like before and again I got a much crispier end product.
