It is not possible to use a single Mac connection to get the maximum resolution supported by the monitor. Apparently this is an issue with all Macs, not just my Mac Mini 2018. After much searching I found that to create two virtual monitors you need to use PBP mode. This works fine, but sometimes the second monitor doesn't come back when the machine goes to sleep. I've tried turning the monitor on and off and using the monitor to no avail. The only consistent way I've found is to reboot the machine. On the plus side, the picture is great and it's nice to have the entire property.
