The most beautiful knives I have ever seen. I bought the whole set and the pan too.

I have used solid stainless steel knives for many years. I'm a commercial repair professional and I do this every day. My old set of solid stainless steel force gauges was getting a little rough after two years of heavy use and I decided it was time to buy a new set. They are much nicer than solid stainless steel dynamometers and Kraft is a high end brand. This rating applies to all knives and pans. Starting from the pan, the steel is slightly thicker than my USG pan of the same design. The welds are a little cleaner and the curved bottom edges have a slightly smaller radius. The knives are very well made and the ergonomics are stunning. The handles are heavy enough to give them a good balance and add a little extra strength when you need to hammer screws with the handle. I don't think the butt of these knives will dent like my force gauges do. The notches on the shank of the handle are very pronounced and help to keep fingers in the right place for better blade control. The wider 10" and 8" knives flex a little more than my craft knives. I have carpal tunnel and don't like to push hard on edge wipes, so that's not a bad thing either. last thought These knives are expensive, and unless you're a professional skater, there's no reason to buy something this nice. If you are a professional taper you will have a hard time finding a better set of knives. I just wish they had 1.5 inch and 2 inch versions although the fact that they make a 3 inch version is very very good.
