Over the years I've always had good luck with charcoal bottle holders. Due to the nature of the terrain I would be riding on, I was somewhat reluctant to fit cheap brackets to my gravel rig (Giant Revolt). I said damn they're cheap and I can always buy one if I need to. I've ridden it about 300 miles on gravel and haven't lost a single bottle yet. They are tight and offer good protection against falling bottles on uneven terrain. I use standard water bottles with no problems. YMMV based on the type, shape and contour of your bottles.
