A sharp edge is harder to clean

I bought two of these knives for use in the kitchen at our house. I carry a single blade folding knife and it seems to be holding the blade well. Both knives need to be sharpened more often to make things easier for my wife in the kitchen. I use a dual grit Japanese wet stone to sharpen all my knives and a leather belt to sharpen and polish the blade.
