This little cut has all the great little things like a hand guard, an adjustable handle that doubles as a stand, adjustable thickness, and is easy to clean (which is why I think no longer use professional mandolin ) I tired of some mushrooms at first and found that many of them were poorly cut, but we tore. It could barely penetrate the skin, and when it did, it stretched a little and then tore through the flesh. Will be sending it back tomorrow and not even asking for a replacement to make sure it's just a bad product that skipped quality control. Instead I will get one that uses a specific Kyocera blade.
