Review on Durable VG 10 Steel Knife Professional by Janet Bartling

Revainrating 5 out of 5

Beautiful knives, photos do not convey them.

Nice knives. I've been using it every day for over a month now. I'm just a home husband, but I cook almost every day. Her hair stands out sharply and the handles are German-style, so they have excellent ergonomics. Japanese D-shaped handles are not very comfortable for me. The boxes say they are made in China but made of Japanese VG10 steel. Each knife comes in an individual box with magnetic closure. I assume they look like Dalstrong knives (made in China with Japanese vg10 and packaged very similar). The profile of a chef's knife has a very nice pointed tip and the belly is slightly higher at the tip than a traditional chef's knife. Has a large gap for the joints. Santoku is a "rocking" type, this is a more modern variety, it has no flat face and swings very well. The boning knife is a lot larger than I expected and is great for carving up a chicken or turkey. The bread knife is great but I wish it was 10" or bigger but for an 8" it's not bad, I mainly use it to slice a croissant but if you're baking your own coarse artisanal bread this length won't pass. . Paring knives and utility knives have decent handles, which is a big plus, manufacturers often make tiny handles for smaller knives. The only downside to this set is the serrated steak knives. They're made from German steel, a softer metal, and have jagged edges rather than thin ones. I personally don't like serrated steak knives and use a paring knife and utility knife to cut a nice steak rather than tearing it apart with a serrated edge. Steak knives are also much longer than average. Since they came in their own box, I might as well give them to someone. Keep in mind that the knives are vg10 (61st Rockwell Hour) so are quite hard and will break when cutting into bone or frozen food. . I dropped the santoku and got a small splinter in my stomach. I used an 800 grit Naniwa Choosera stone to repair the chip and it is like new now. I mainly use a putty leather strap to keep it sharp, once every 2 weeks when I notice it's not cutting as well as I'd like. I love that all of my knives can cut through magazine paper with a nudge against the grain. I bought 2 of these sets, one as a keepsake and one as a gift for my dad. I also convinced two of my friends and my sister to buy a set. Haha I am personally responsible for selling 5 of these sets. I bought this set when it was on sale here on Amazon.
