This knife is amazingly sharp straight out of the box and after a few weeks of regular use it doesn't seem to have lost any of the edge sharpness but I can tell by a very strange Reason Just Don't Make You Love It: The G10 grip is always cold. No matter how warm my kitchen is, fiberglass stays cool and I find myself unconsciously reaching for other knives, knowing that this one is sharper and better suited to my needs. I can't figure out why it is. I have several knives with similar handles and they all seem to stay just below room temperature, but for some reason this one refuses to absorb heat. In addition, this is an exceptional knife. It's light and well balanced for its length, and I find the unusually shaped blade very comfortable to hold. If it was comfortable to hold it would definitely be my favorite knife, but I just can't get over that cool touch.
