I'm a fan of sharpness. This is partly because we cook at home, but more because we have had a wonderful carpentry workshop for many years. My joy are high-end hand tools, and they won't work unless they're expertly sharpened. My pet peeve with almost all kitchen knife sharpeners is that they remove enough steel to end up destroying western knives. This is less of a problem with Asian knives, but still annoying. With this Brod & Taylor product, my knives are as sharp as ever with virtually no flour loss. We also have their bread proofer and are very impressed with both. Get this device. You will love it.
