I bought this egg separator because I make all our ice cream which uses 6 eggs per liter. I was very disappointed when all the egg whites didn't separate from the yolk. I let it sit for a minute to see if it would eventually separate, but it didn't. I first grated the second egg in my hands, thinking maybe it was too cold. No difference. I may be using free range eggs and would have worked with cheaper eggs, but that's not an option. I just checked the description again and it mentions 'cold white' so I didn't think it was a problem. However, two days later I tried again and took the eggs out of the fridge for 30 minutes before using the separator. This time everything worked much better, almost perfectly. It would be helpful if this note was included in the description.
