My broth just got a whole lot better. I have a small strainer that I've used for years, but sometimes when the foam floats to the surface of beef, chicken, or ham broth, what you're trying to strain is fine. I read an article about Asian broths that talked about ultra-fine filters, so I bought them. The mesh is so fine that the holes are almost invisible. The colander can collect not only lime, but also broth from ground pepper, spices - everything. In general I would wish the screen was stronger, but don't take that statement as a reason to switch to another - from what I've seen they're all pretty well made in the same way, and it's not such that it's poorly built, I just want it to be made out of heavier materials. The last thing I would have wished for was a little more depth like a typical strainer, if you're trying to go deeper into the pan you have to move slowly or it's almost like putting a spoon through the liquid let run. - everything just goes away.
