The 1000 grit stone is great for removing material and the 6000 grit stone is just as good for polishing. THIS IS NOT A REPROFILER. You'll need a much coarser 700 or so stone to remove scratches and dents. This stone is excellent for knives that require regular maintenance. NOTE: This rock is soft in comparison, so it removes material from the knife just as easily as it does the rock itself. IF you're not careful, you'll gouge the rock, creating ridges and valleys.
