Pro tip: To match an existing angle, take a marker and color in the bevel of your knife. Set an angle that looks "almost right" with a fine-grained stone and give it a few strokes. If the mark is visible near the back of the bevel, decrease the angle. If the sharpie is visible near the front edge of the blade, increase the angle. I keep a legal pad in the box that lists for each knife where and how I clamped it and the angle I set it at to make re-sharpening easier.
