I chose this device because it CANNOT be set below the boiling point. The tea water MUST be hot, so don't try to sell me that 400-degree crap just because the machine doesn't work. Zeppoli comes straight out of the box, plug in, fill with room temperature filtered water and BAM! Three and a half minutes later I'm cooking. It looks sleek though, they sacrificed a better, more perfect fill in favor of the form factor. Water should be poured more slowly. I think, I suppose, it's a smart thing. Think about what happens when you splash boiling water or anything else on your skin. So I'm not saying "VERY SLOWLY," just a little slower than "Come on! Come on!”, which is my speed. How does it taste? Wait. give me a sip still hot Wait. Good. Delicious. The device does not affect the taste. I can taste the same filtered crystal water I poured into the pot and the Irish breakfast tea (very strong, highly recommend). Drinking erythritol tea was an important part of my 40# weight loss on the keto diet. This unit will help me reset my next 40 without the need for a shared microwave. Oh yes, and it's beautiful. I don't get this whole "LED" thing, but whatever. It's a beautiful blue color. Using tap water is easy. Don't be principled.
