Great purchase, great addition to my outdoor kitchen

Really enjoyed eating this pizza instead of joining the family outdoors. This oven (I named it Kylo) matches my other grills, Vader and Luke. There's a learning curve. I started with wood chips. I was successful but inconsistent. I figured it would be like my grills and kamados would light up one day and keep that temperature at that temperature for hours. I learned my first lesson, you gotta keep feeding the beast. You have to be careful and constantly fuel it. After figuring out a few things I managed to get the temperature up to 600 degrees, I cooked some chicken thighs, fried some garlic and some naan with butter. I ordered pellets which I have never cooked with pellets so the first problem was lighting them. Pellets are made for smoking so it took some research to create a raging fire. The lovely people at OnlyFire emailed me how to light the stove upon purchase. Anyway, I got the baubles for the second burn, and we're going to learn how to light the baubles again. I let them go from smoke to fire and continued on with my first pizza. I buy this model specifically for spinning. And it was worth every penny, the food, pizza and chicken were evenly cooked. The work day came and I fired up the family barbecue. And everyone played great. Notes: If you're heading this direction with a wood-fired pizza oven, they need to be heeded. You have to constantly give him fuel. My biggest complaint, this product needs a thermometer. It's difficult to measure internal heat without removing the door and measuring with an infrared thermometer that lets air in and gives off heat. You also need to learn that the chimney has to regulate the temperature, like draft dampers on a grill. I love it and I would buy it again.
