I've always cut my hand cleaning knives. This ability is especially evident during the holidays. One of my most notable experiences occurred on a fateful Thanksgiving when our guest in charge of sweet potatoes canceled the reception an hour before the guests were due to arrive. I quickly put together a sweet potato dish and was cleaning my knife, proud of my accomplishment, when disaster struck. I had to watch in slow motion as the knife slipped and the extremely sharp blade sliced through my metacarpophalangeal joint (the joint at the base of my index finger), resulting in a bloody mess. I hurried across the light beige carpet to the bathroom, pausing for my brother to take a picture to document this year's vacation trauma. My parents were just thrilled that the photo of my bloody hand appeared on the intro of their photo album. Thanksgiving passed uneventfully, but the pain from the scar lingered for years. I've had many other skirmishes with sharp knives. My father is a butcher, so the knives in our house were always very sharp. I've been trying to change the way I clean my knife, but just recently, in November, on my significant other's birthday, I got a bloody middle finger from my amazing HENCKELS Forged Premio 8 bread knife. I'm frugal but spent a little more to get the gray version to match the gray of everything else in our house. I have used this item and have successfully cleaned knives without cutting my hand. Simply squeeze some washing-up liquid onto the bristles and run the knife over them (face VON LADA, of course). Just a few strokes and rinses and the knife is clean and ready to go back into the block, cheese or other hard-to-clean substance. It also looks good and is a great conversation starter. It's not expensive, but it pays for itself quickly. I will benefit from not using as many first aid supplies to treat my accidental puncture wounds. I'm sure I'll find other things that can hurt you, but hopefully nothing more dangerous than kitchen knives. Thank you Joseph Joseph for saving me from my knives.
