This is the perfect knife for small jobs

This is the perfect knife for small jobs. I was a little concerned when I heard that there might be jamming issues since the blade shape doesn't actually thin out until you've cleared the clogged area. And all of this is true. But I haven't had any trouble passing anything yet. Out of the box, the edge is sharp, but not as sharp as it could be. I sharpened my original to 13 degrees (which appears to be his factory sharpening) and it was razor sharp. It effortlessly slices onions and shallots. The shape of the knife is very comfortable. Some santoku knives are very blunt at the tip. It has a very pronounced tip that acts like a chef's knife, making it perfect for small items. And the blade has just enough depth to keep your knuckles from hitting the cutting board. Great little knife.
