This is the perfect knife for small jobs

This is the perfect knife for small jobs. I was a little concerned when I heard that there might be jamming issues since the blade shape doesn't actually thin out until you've cleared the clogged area. And all of this is true. But I haven't had any trouble passing anything yet. Out of the box, the edge is sharp, but not as sharp as it could be. I sharpened my original to 13 degrees (which appears to be his factory sharpening) and it was razor sharp. It effortlessly slices onions and shallots…
