Indispensable for fluffy soft mashed potatoes and dumplings. Well done for a lifetime.

I usually think of most kitchen appliances as a waste of time, money and space - people who can't cook try to compensate/hide it by buying some toys to make it so looks like they are good cooks. "Look at all the gadgets I have, I'm obviously a GOURMET!" I keep the basic tools in my kitchen and use them to the maximum. However, if you really want creamy, light and fluffy mashed potatoes, there is no substitute for using a potato ricer. I've tried whipping them with a whisk, I've tried whipping them in a blender, etc., but rice potatoes only have the texture of clouds and nothing compares. Never any lumps. When you make dumplings, you want perfectly smooth, dry mashed potatoes. This is provided by the ricer. Although this device is quite expensive, it is really well made and designed for heavy loads. With normal use and no abuse, it should last a lifetime. There is enough leverage to easily slide the potatoes through the holes. The capacity isn't that big, but for the amount of potatoes you'd cook for a family meal, it takes a minute or two. They fit about enough potatoes for one person, and take about 30 seconds to fill, squeeze, and pop open ready for the next batch. So 2 people per minute, more if you are coordinated and energetic. Recommended if you eat a lot of pureed vegetables or make dumplings and the cost of a disposable tool doesn't seem silly.
