Do you keep your things dry, color or weight?

Every summer I bag and store dehydrated vegetables for use throughout the winter. I've always been bothered by moldy figs, plums, zucchini, tomatoes, etc. It's an extra layer of security that I don't lose a glass or twenty veggies. The manufacturer claims it's "rechargeable," and some other reviews say the same. The downside is how do I know if the balls are saturated in the package? pearls!
