The German 1.4116 high-carbon, stainless alloy blade resists stains and corrosion, exhibits toughness and durability, holds its edge retention, and is easy to re-sharpen to a razor-like edge. This knife line is one-piece stamped, which produces a strong blade from heel to tip. The blades are heat treated and cooled to achieve a Rockwell of 56-57. The over-sized, hygienic, molded, seamless polypropylene handles provide comfort for the extreme demands of a commercial kitchen. Handcrafted in Santa Catarina, Portugal. The Knife for Life guarantee provides a lifetime warranty against material and manufacturing defects.

One of my favorites

I process about 2000 pounds of meat and fish a week. This knife is my second favorite after my Misono. For the price it's fantastic with an edge that lasts

Sharp and holds the blade

One of my best knives. I have at least a dozen and a few boning knives, but this has been my favorite for years. This is the second bought but for a colleague who also likes it.

  • This series of knives is solidly forged to ensure a strong blade from heel to toe. The blades are heat treated and cooled to achieve a Rockwell hardness of 56-57.

Holy Moly what a deal!

How the hell did Messermeister manage to make such a quality blade at such a price, I don't understand. I own a lot of high-quality Messermeister steel, including a 9" Meridian Elite chef's knife, so I was initially weary of deciding to try this deal of the day at this price point. Well I'm not disappointed. This knife cuts perfectly! The blade curves against the squirrel, but it just seems to know where to point it. I never have to enforce a given policy, it just follows me.
