Not much accuracy.

I'm not a fan. About 7 degrees different than Fluke and my other probes at about 400 (for medium temperature). enough time for the diameter to make no difference in the temperature averaging. Good materials but poor accuracy.

Accurate and flexible

I am satisfied with the performance of this thermocouple, although it is expensive. I use it in a wood fired pizza oven and needed something I could roll into a round shape under a baking stone and withstand 1000ºF. That fits the bill. I checked the accuracy with an infrared thermometer and it was within 1º which is fine for my use. I liked it so much that I ordered another one!
