Hard Boiled Chicken Hooks

We love making Khao Man Gai, which involves cooking the chicken and then hanging it to dry and cool to get the best texture against the skin. The dish is served at room temperature. They are great for hooking the chicken under the wings and hanging the chicken on the side of the simmer pan to keep it from hopping around on the bottom of the pot. It makes it really easy to take the chicken out of the pan without burning it. I can't stress this enough - pulling a chicken out of a large pot with tongs without damaging it or splashing boiling water on it is difficult, even if you're large. It's also very handy if you plan to cook more than one chicken in one pot at a time, or if you're making a whole chicken broth. let them dry. We hang them on the handle of our top microwave/hood. They seem very strong for lifting the 3-4 pound chicks we use. Hooks are really sharp. I imagine they would also be great for hanging ribs or a roast that has been rubbed dry to allow it to air dry properly on all sides before grilling or grilling. There were three types of meat.
