I got this after getting fed up with my marcato ravioli tool which is really hard to use as pasta dough needs to be absolutely perfect , and imperfection in general turns your ravioli and bait into a gooey mass of dough and filling. The attached picture is my FIRST ATTEMPT to make ravioli using 2 trays I just bought, the "cleaner" ones coming out of this tray with less flour. The tablet is really easy to use. Simply place the dough on a baking sheet, press down with a plastic nozzle, place the filling on top, cover and roll up. Because the sheet pan has no bottom, it's a lot easier to get the ravioli out without using a lot of flour since it has less room to stick. The size of the ravioli is big and the filling is perfect. Cooks 12 pieces at a time, each batch takes about 2 minutes. If you want to make ravioli, forget the marcato nozzle or ravioli tamper. Got it! If you're having trouble with that, you probably need to tweak the dough. The tray is fairly forgiving compared to the marcato die, making it easy to repair.
