Knife-pchak JD-Tec HK-1024D - multifunctional, mainly intended for "boning" - separating meat from bones, skins, sinews. The knife also deftly cuts large pieces of meat, cuts bones, and is suitable for cutting fish and vegetables. In terms of the shape and structure of the blade, the knife is very close to the traditional Uzbek pchak kayiki. It''s no secret that the pchak has an excellent cut, which is due to the special shape of the blade - these are straight slopes from the butt and a sharpening angle of 14-16 degrees. The JD-Tec HK-1024D knife is a compromise blade shape that combines straight descents and a cutting edge sharpened at a wider angle. Thus, it was possible to achieve an excellent cut of products and sharpening resistance. Any person can handle the editing of such a blade with the help of a simple musat or a small grindstone. We submitted our blade for testing to the Chef, originally from Uzbekistan - he works in the Plov Center chain of restaurants in St. Petersburg, he answered us - In my daily work I use two or three knives. Such blades for kitchen and travel have an attractive set of performance properties and are quite affordable. The steel has high hardness (54-57 HRC HRC), wear resistance and strength (contains a high level of chromium, similar to 420hc steel, but it contains less vanadium and more molybdenum), corrosion resistance due to the high chromium content and the addition of molybdenum. The blade is Full Tang style with a stainless steel medallion pommel engraved with a helm. The handle of the knife is made of ebony wood. She is very strong and beautiful. Easy to clean and comfortable in the hand. The knife is packaged in an elegant black cardboard box. It is a wonderful gift for any occasion. *Washing in the dishwasher is prohibited.

Medium quality, especially for that kind of money.

Disappointed. I hope it will not affect functionality, but every time you take a knife, the curvature of the blade is unpleasant.
