Runs and delivers plenty of power. But the controls aren't that convenient - for example, the power level resets to the maximum every time you turn the device off/on and when you switch to temporary mode and back. It's also quite noisy. All in all, the Vollrath Mirage Pro doesn't even come close to the performance of the Vollrath Mirage Pro - not only in terms of precise temperature control, but also in terms of general use. I'll probably keep it to myself. I love induction and will soon be replacing my hob with an induction hob. RW will help me tie up until then. But Vollrath is so beautiful, I'll keep it to myself - if only to melt the chocolate! (You need that for tempering!) Vollrath is of course 1.5 times more expensive than the professional RW version and 3 times more expensive than the home version. I think you get what you pay for, although I can't imagine you settling for the Pro version of RW. The home version is cheap enough to serve as a replacement.
