About 20 years ago it was observed that almost all organisms tested showed an increase in lifespan with calorie restriction. Then they realized that they actually had to limit themselves to methionine to get the same result. Recently it turned out that this is a lack of glycine compared to methionine. Consuming adequate glycine can have the same results as calorie restriction. (there is not enough research at the moment to know anything about humans). When humans ate the whole animal, we had a lot more glycine in our diets. The skin and offal are rich in glycine. While medicine claims that glycine is not essential because we make it ourselves, it turns out we don't produce enough of it and need it in our diet. Glycine has a sweet flavor and is a delight to add to tea or just water.
