Silicone mesh challah mold is great for making gluten free challah. Since gluten-free dough is soft and therefore cannot be braided, this pan helps me a lot. Instead of spending hours trying to make soft, gluten-free dough, I use this pan. I just put the dough in and it comes out in a challah shape. This is a great challah pan that looks like wicker but doesn't actually need braiding. You can also use this pan for regular challah, but I only use it for gluten-free challah because my regular challah dough can be hand braided. My gluten-free dough is softer and therefore harder to braid, which is why I use this pan.
