Amazing quality for the price

When the item arrived I was very impressed with a quick inspection of the wooden handle and balance. However, when I finally tried using it to slice cooked rib roast a few days later, it was disappointing as the knife wasn't sharp enough and I ended up crushing some of my cuts. I checked the knife blade and found a few ridges, particularly near the tip and handle (my roast had no bone, so it was factory made). Dalstrong knives hit the mark. As a seasoned chef with over 30 years experience in the industry I have tried most of the well known brands. Their names are known. I'm an aspiring chef looking for great knives.

I'm self taught and I think I can cook better than most restaurants. When I realized how important knives are, I started investing in Shun. I've spent over $1,000 on a couple of their knives and thought I'd take good care of them, although sometimes I was able to wash them right away rather than a few hours later. Don't borrow FNG in lane!

First of all no photos or videos because I paid for this knife with my hard earned money. I'm a professional gourmet chef who has been cooking for 30 years so not exactly a spring chicken. These are the first knives I've been using in over 15 years alongside the standard Victorinox meat knives. I ordered a 6" gladiator boning knife and 8" and 10" butcher knives.
