"It's a knife "!

I was looking for a large knife to butcher my 10+ pound dry aged meat that I make. This knife easily cuts through the hard outer layer. Doesn't slip, very well made. What can I say? It's Dexter!

Worth every penny. - Tag Accessory

Dexter Russell have been making professional cutlery since 1918 and this knife is a good example of why they are so successful. The handle is comfortable and fits well in the hand even when wet. The blade is strong and really sharp. It holds the edge well and is easy to sharpen. I have other DR knives that have been used consistently for over 30 years and I have no doubt this knife will do the same. Buy with confidence.

Disappointingly good for equipment

I bought this blade for slicing main meats like ribeye, tenderloin or pork tenderloin for steaks and chops. When I received the blade it had a chip on the edge that took a long time to repair with a whetstone. When cutting large primary cuts, the blade does not slip as expected. It's not about the sharpness, it's about the fact that the blade is quite thick and it takes a lot of strength to cut it. I use this knife for sawing rather than cutting. There are better knives for cutting main meat…
