Ceramic blade is made from Kyocera's proprietary zirconia material produced in Japan for exceptional quality and durability. Ultra-sharp, pure advanced ceramic blades that will maintain their edge up to 10x longer than steel blades. Lightweight and easy to clean, blades will not brown food, are rust-proof and resistant to acids. Safe design features corner notches to secure over a bowl and includes handguard for protection. Achieve smooth and even slices using the adjustable dial that provides 4 different cut thicknesses from paper thin to thick: 0.5mm, 1.3 mm, 2.0 mm and 3.0 mm. Easily slice or grate cabbage, carrots, cucumbers, onions, potatoes, daikon, ginger, and more.

Makes nice thin slices

This mandolin was a replacement. I wanted to use something that didn't require the use of an insert. Of course this mandolin just makes a simple thin slice, not many different slices, but that was all I wanted. There's a slice thickness dial that's easy to use, but there's little difference in thickness. The blade is very sharp, but the kit includes a tool for grasping the object to be cut. Use it or regret it! Easy to clean. It looks good.

A VERY SHARP mandolin that slices very thin even sweet potatoes!

Works very well when you need to cut something very thin or ultra thin! Even sweet potatoes are a snap. Handguards aren't worth a penny (nor are handguards for 5 or 6 different mandolins I've bought over the years), but just buy yourself a pair of cut-free gloves and then you can safely cut things by using them easy to hold in a gloved hand. This pup is REALLY SHARP so don't try to cut without these gloves!

Suitable for very thin slices.

This mandolin has four strength settings. You can cut wafer-thin vegetables at the finest level. And at the highest setting, your slices will be no thicker than 1/8 inch. That's not enough for many of my recipes. Every other mandolin I've used will cut food 1/4 inch thick. Thickness aside, it's sharp enough. But she feels weak. This mandolin has been sitting in a kitchen drawer for months. I just used it again today, and was reminded that it doesn't cut veggies as thick as I'd like. After I was

A very economical mandolin that gets the job done!

I love it: very sharp, ceramic blade stays sharp enough, lightweight and easy to use. Fur: I prefer mandolins that are more stable on the counter, but they usually cost a lot more and it gets the job done if I'm careful. Dislikes: While the handle is great, a case with it would be just as valuable as it's difficult to pack. I gave two stars because it's sharp, it cuts well! Too good. I cut off part of my thumb, most of it, even with the protective grip. After driving to the hospital to sew, I blamed my clumsiness. Well, the next day someone in the household did the same thing, resulting in a much less severe cut, but in exactly the same way. Defense is too low unless you have very small hands. One of the best kitchen items I've ever owned

One of the best kitchen items I've ever owned. I was given one about 10 years ago, it has always been sharp and only recently the plastic edge broke from too much pressure when cutting. I immediately bought another one because I love how it makes a lot of prep tasks so easy. Wow! What a slicer.

I've never been more impressed by a product than my new Kyocera. I had to test this, so I grabbed an onion and set the slicer to 4. I'm not kidding, I sliced an entire large onion in 15 seconds. Yes, the onion was too big to cut, so I trimmed the ends to fit. On #4, the slices are the thinnest I've had on any other mandoline. And sharp! Thickest edge is thinner than advertised

I basically bought this because there were a few comments about the blade being sharp enough for potatoes as I wanted a mandolin for making Spanish tortillas. The blade really is extremely sharp and goes through a potato with ease but it claims 3mm on setting #4 and the thickest I had was around 2mm which is way too thin.
