I was using one of the original green versions of the Orgeenic and while I was able to make omelettes there were some issues. The coating wore off over time (it was never really non-stick) and there were frequent stains on the side that didn't sit flush. It also required two hands to hold it open and pour. This Gotham Copper Fry Pan gets the job done with ease, really doesn't burn without oil and stays open on its own, gently spinning, cooks evenly and makes perfect omelettes even when other ingredients are added, great pancakes etc. The rubberized handles are comfortable for hands easy to clean. I LOVE IT and highly recommend it.
