
Not sure what Cut Level 5 is (which benchmark was my first question) I looked it up and found the only higher protection level available is real chain mail. Well, the other piece of information I think is important is that there is controversy that "certified EN388 level 5 cut protection" is not the same. Just search for terms and you will get more than you want to read. Anyway, I bought a pair of gloves. They fit perfectly (palm size works) and are flexible to work with. I've tested them a bit while holding my knives, which I sharpen after each use, and they seem to get the job done. The only thing I don't recommend here is if they save you with a big swipe or quick mandolin action. When this crash happens I will update this review. But the bottom line is I'm glad we have them and they bring more protection and confidence to kitchen tasks.
