Goodbye Flavor Goodbye Tasting Notes

After several years of storing various roasted beans in jars, I decide to try a CO2 aerated canister (after hearing from a few people that they are somehow better are). I got a 2lb bag of my favorite beans (Ethiopian Harrar) freshly roasted from my local coffee supplier and loaded this canister (it took over half a bag). I kept the rest of the beans in one of my regular jars. As expected, I didn't keep this jar in the fridge (like I usually do with glass jars) but left it on the counter (usually it's pretty chilly in my apartment this time of year, below 70F). For the past week, I've alternated the beans from both cans. The first and second day they tasted almost the same. I thought the ones in my glass had more of the amazing, fruity blueberry notes (that Harrar coffee is known for), but I perhaps attributed it to a slight change in my brewing method (I thought maybe my kettle was warmed up). to a slightly different temperature, or maybe my water to grain ratio was a little off). As the days went by the difference became more and more apparent, to the point where the coffee I now make from this can has almost no desired flavor notes and I could mistake this expensive coffee for any old grocer that bought in beans became. In comparison, coffee brewed from a different can tastes almost as good as the day it was roasted, with only a minor degradation in flavor. As an additional test, I made two cups of coffee at a time (one from each can) and poured one cup each for myself and one cup for my friend (who is a great connoisseur) and blended them blindly and impartially to taste. It was immediately clear to both of us what was what. So in the end I'm completely unimpressed. Really annoying to see that I don't feel like drinking that $20 coffee and will probably just throw it away and also have to deal with returning this item. At least I'm more confident now that my current cheaper stock canisters are doing a decent job.
