I only use these Crown pans for baking cookies. I've used insulated sheet metal, dark-finish sheet metal, coated sheet metal, and an uncoated, uninsulated flat aluminum sheet my mother gave me decades ago. Only smooth, shiny aluminum sheet will reliably bake and brown adequately at the temperature my cookie recipes recommend, without prior experimentation or adjustment. I wanted two identical sheets to my mother's but had a hard time finding them until I searched for Revane. They are made in Canada and so far have baked perfectly on my first attempts. They even came in 14 x 16.5 inches and made the most of the size of my oven. I highly recommend them for easy baking of cookies.
