We use one of these when preserving guava jam. This separates the bottom of the pot from the jars when we cook to sterilize the guava jam. Without this, glass jars can crack due to the much higher temperature of the pot base touching the bottom of the glass jars. Even without this, there is no gap between the glass jar and the bottom of the pot and the bubbles that form under the glass jars cause the glass jars to move and the glass jars can break when they hit each other.
